Irish you a Happy St. Patrick’s Day!

Too corny?  No?  Ok, good.  Back in college St. Patrick’s Day was one of my favorite holidays, usually because it involved drinking outside all day and dying everything you ate/drank green.  Sadly, since graduating in 2007 I don’t think I have gone out to celebrate my Irish roots.  Drinking mid-week is not nearly as fun when you are waking up at 6 am for work the next day.  Maybe I’ll be able to find someone to go have a drink with me after work, it is going to be a nice day after all.  I am totally wearing some cute green shoes though!

One of my favorite things about when the weather gets nicer, besides the nice weather obviously, is the gym EMPTIES out.  Last night was no exception, I even found a parking spot on my first pass through.  I didn’t have to fight for an elliptical and there were treadmills for miles!  I wish I could have been running outside instead of cooped up in the gym, but unfortunately that is not in the cards for me right now.  Yesterday, Meghann was kind enough to email me the strength training plan that her friend Sarah made up for her, so last night I incorporated some of that into my workout.  These are the exercises I did after my 17 min walk on the treadmill (Alpine Pass program) and 25 min on the elliptical.

I liked having something to actually follow, because typically when I try to lift I wander around the gym looking like a lost little puppy.  Especially because I’m also trying to avoid the ex bf and wherever he may be, thankfully he peaced out while I was still doing cardio so the weights were mine!  The muscles I worked yesterday are not actually sore at all today, so I think I either need to increase the weight or reps next time.  Also, does anyone have a good ab workout? No matter what I do, I can’t seem to work them to the point of being sore the next day, and that’s how I judge the workout and whether or not I’m building muscle.  I’ll probably stick to this plan as a guideline for now, while continuing to throw in other exercises I like such as chest presses.

For dinner last night I made myself a Chicken Quesadila (I know, I really branch out), and I am so mad because I had all these black beans in the fridge and complete forgot to add them!  Grrr, I hate when that happens.  Anyway, first I seasoned the chicken, since I was only using one chicken breast, I didn’t want to use a whole package of taco seasoning.

Ew, raw chicken grosses me out.  A sprinkling on both sides of these spices:

  • Oregano
  • Salt
  • Pepper
  • Cumin
  • Cayenne Powder
  • Garlic Powder
  • Onion Powder

Then I cleaned out my pan, sprayed it with some non-stick spray and added my green and red pepper and onion to cook for a few minutes.

While they were cooking I cut up a zucchini and prepared it for roasting.

Olive oil, salt, pepper, and seasoned salt.  Cooked for 20 minutes at 400 degrees.  Then I got back to building my Quesadila.

A layer of cheese, the veggies, and finally the chicken on top.  After it has cooked like this for a few minutes, fold the empty side over and press down, then flip for another 2-3 minutes.

All together with some salsa, sour cream, and some natural corn chips on the side.  It was good, would have been better with the black beans though 😦 .

Yesterday was Tuesday, so that means the highlight of my week, LOST, was on!  Last nights episode really redeemed itself from two weeks ago, I thoroughly enjoyed it.  We got a Sawyer and Miles (sort of) sideways story, and instead of being a con-man, Sawyer was a cop!  I was happy to see him back on my TV last night, I’d missed him.  Also, Whidmore and his gang are on the other Island setting up camp and fences to keep out the black smoke monster aka fake John Locke.  As good as this episode was, I really can’t wait for next weeks.  Babe stop reading here.

It’s all about Richard, the most mysterious man on the Island! Apparently we are finally going to learn all about him, how he got there, why he never ages, who he is, why he wears eyeliner, OK maybe not that last one, but that’s just something I’m curious about.

  2. Wow, what an awesome quesadilla! It looks so cheesy and delicious!! I’m usually too lazy to make the chicken part, so the canned black beans do the trick.
    And I’m so excited for St. Patty’s Day. Not as fun as my college days, but green food always makes me happy. Have a great Wednesday!

    • Thank you, yes I do not go easy on the cheese that’s for sure. Yeah I was hoping there would be some green bagels in the office this morning, sadly there were none.

    Yay about the gym emptying out. And I feel you on the weights… they are so darn intimidating to me!!!!! Avoiding ex in the gym? Yikes… Run ins with exes are NO fun. Unless you look really hot 😉

    Your quesadilla looks awesome!!! And i’d totally go have a drink with you if I was there. I want to do something too but don’t anyone to do anything with 😦

    • I will let you know! And yes I see my ex almost every day at the gym, it’s super fun. Ugh, too bad we could totally go find some green beverages somewhere!

  5. I like to do ab videos/classes. They always push me further and I wind up sore. I need to do it more often though. I’m super inconsistent.

    • Yeah, there used to be a Jackie (from Bravo’s Work Out) video I would use, but then we got rid of Comcast and I lost exercise TV on demand.

  10. Mazel tov! No? Opa? I don’t really do anything for St. Patty’s day, but if someone gives me a green beer, I’ll drink it. I am wearing fuchsia today, but it’s not anti-Irish. It was just clean.
    I do a whole rigmarole of planks, jackknifes and walking push ups for abs. The first time I did it, I couldn’t breath the next day. In the good way.

    I agree–partying isnt nearly as fun when you have an early wake up call looming over your head. The day after St Pattys Day should be considered a national holiday and you should get off work! Sounds good huh!

    As far as ab workouts, I do a few planks a week and thats it. Im sure youve heard this, but getting sore isn’t really a good indicator of a good workout or not. So, try to not to use that as the end all be all of a good workout!

    • That sounds awesome, I totally agree! Yeah, I know it’s not really the best indicator, but I just don’t feel like I did anything to exhaust the muscles if I’m not sore the next day. I always feel like planks work my arms more than my abs.
