Finally, the post I promised to have up on Friday

Phew, I am back after my long weekend in NYC.  I was a bad blogger this weekend and severely neglected you readers.  Sorry!  Don’t worry though, I have tons of pictures and stories to entertain you with now.  I know I promised to put these pictures up on Friday night, but because of the impending blizzard I changed my plans and headed out of town Friday after work instead of Saturday afternoon. Here are my mushrooms and scallions sautéing for my chicken marsala dinner on Thursday night.

This was three chicken breasts, that I cut in half to make the chicken thinner.  They are coated in flour that was seasoned with salt, pepper, and cayenne pepper, and cooked in olive oil. After the chicken is brown on both sides, add marsala wine, chicken broth, and the mushrooms and scallions from earlier, and let it simmer until the sauce thickens to your preferred consistency. Served with wild rice, oh so yummy, and there are still leftovers!

Pumpkin thought it looked and smelled delicious also.  She always sits next to me at dinner, waiting for a piece or for me to drop some.
