Class of 2011

I think I may have finally figured out the best time to make the VA -> PA/ PA -> VA drive; Monday’s at noon.  I left Villanova at 12:20 yesterday afternoon and was back in my house by 2:50, smooth sailing.  My sister’s graduation weekend was very fun and very busy, and for some reason her internet in her apartment was acting up which is why this is my first post since Friday morning.

I hit the road to head north right after work on Friday, and made it to my sister’s apartment a little before 8 pm.  I promptly handed over her grad gift, this necklace engraved with a V on the back, and begged her to please feed me.  We headed over to Mixx with one of her roommates and her family where we sat enjoying delicious food and cocktails for hours.  It was late by the time we got back to the apartment, and with a 7 am wake-up call planned for Saturday, my sister and I each had one more drink before calling it a night.

All of us ladies were up bright and early Saturday morning to get ready for the College of Nursing Commencement ceremony held at the beautiful Villanova chapel.

The ceremony was really nice, although somewhat long to go without breakfast and coffee.  I was starving by the time we got out of there.  Luckily champagne was popped and mimosas started flowing like water once we returned to Col’s apartment.  The girls were nice enough to provide their hungry families with a variety of lunch foods to hold us over until dinner after the Baccalaureate mass later that day.

Once my champagne buzz was good and going, it was time to head over to the Villanova Pavilion for mass.  An hour and a half later that was over, and it was finally time for more cocktails and dinner :).

After an early morning, and entire day of drinking, and another early morning wake-up call on Sunday, I was once again feeling lame, and went to bed early while the college grads went out for the night.  With the iffy weather forecast, we were unsure whether graduation would get to be held outside, but when we woke up Sunday it was indeed on as scheduled in the football stadium.

The most entertaining part of the commencement ceremony was hearing the sounds of champagne bottles popping, and watching the corks fly into the air during the whole thing.  I was kind of jealous I didn’t have a bottle to chug out of during the ceremony, haha.  Once actual grad wrapped up, it was time for the grads to head to their respective locations and pick up their diplomas.

Sunday’s day of festivities continued with an after party at my sister’s guy friends house.  There were your typical activities, beer pong, dancing, and cake fights.  Yup, cake fights, the amount of butter cream icing in my hair was sad, only because I couldn’t then eat it.  I did the responsible thing and eventually stopped drinking so I could be DD for the grads, and what does my niceness get me?  Made fun of.  I got called old, and they even went so far as to call me Ms. McCormick.  Stupid boys.  Just wait, you all will be 26 before you know it.


We woke up yesterday morning with a tall order on our hands.  To pack up my sisters entire apartment and load the car in about two hours.  They had until noon to get their crap out, and of course she hadn’t packed anything yet.  We stuffed as much as possible into garbage bags, and fitting things in the trunk was like a 3D puzzle.  Somehow I managed to do most of the heavy lifting, and my arms and shoulders are KILLING me today.  Probably because I had to rearrange everything my sister put in the car, she is not an efficient packer, haha.  Somehow we got all her stuff moved out, and I left her and her roommates alone for the cleaning aspect.  I have no idea what time they actually left their apartment for good.

Back to work today, it’s rough, but luckily only one full week of work to get through and then another long weekend for Memorial Day and then summer hour Friday’s start! Yay!  Have a great one!

Oh, so it’s Friday the 13th

First things first, how beautiful did my sister (blondie) look at her senior dinner dance this past weekend?  Brit you looked gorge too!  Not going to lie, I’m jealous of her teeny tiny waist and bootay :).  I wonder if I could borrow that dress…

I can’t wait to celebrate her graduation all weekend at Villanova, I just hope the weather cooperates.  I seriously feel like it was just yesterday when she was at my JMU graduation and I was at her high school grad.  Time goes by too fast, waaaaaaaaaaaaah.

Last night at the gym I did 35 minutes on the elliptical followed by the same core workout from last week.  It takes about 30-35 minutes to get through the three sets of all the exercises, for those who asked last week.  I like the workout, it makes me pay attention to areas of my core that I usually neglect, like the lower back.

So after a beautiful Mon-Thurs this week, storm clouds rolled in this morning and are expected to stick around for the next six days or so.  Typical.  Especially since I have to get in the car and drive this afternoon, because rain never makes traffic better.  Ugh, I might spend all day researching ways besides 95 to get to Philadelphia.

I broke out the white jeans today for the first time this season, there was a moment of apprehension when it came time to pull up the zipper.  They fit, but not as loosely as last year.  You win some, you lose some.  I also just put a piece of tape across the  bottom of my shoe to hold the sole together, I will not give up my favorite pair of Coach wedges, ever.  Staples might be the next thing used to keep them together.

Alright well I’m off, someone was mean enough to schedule a 9:15 meeting.  I haven’t even finished my coffee yet, so it should be interesting.  What are you all up to this weekend?  Oh yeah, and Happy Friday the 13th!

College Weekend, and Halloween Themed Recipe

Well, this weekend flew by, and here we are at Monday again.  I was on the go all weekend, and didn’t sit down on my couch until yesterday at 5:00 pm.  Let’s go back and start with Friday’s activities.  After a stop at the beer distributor on my way home from work, where I picked up one of the last two cases of Dogfish Head Punkin Ale in stock, I came home, put on my apron and immediately got cooking.

For dinner I was making my mom’s traditional Shepherds Pie, with an untraditional twist of my own.  Here’s the link for the actual recipe,  ingredients and amounts. Instead of a layer of mashed potatoes on the top, I was going to use mashed sweet potatoes.  I peeled and cut the potatoes, and boiled them in some water for about 25 minutes.  While they were boiling, I combined some brown sugar, milk, and butter in a small sauce pan to add to the potatoes once they were mashed.  Once the potatoes were done and out of the way (kept warm in their pot with a layer of milk drizzled on top) I got to preparing the rest of the meal.

add a bag of frozen corn

combination of spices

stir and combine for a few minutes, transfer to casserole dish, top with mashed potatoes

25 minutes later in a 425 degree oven, you have this

Using the mashed sweet potatoes added such a different flavor to the dish.  The sweetness, along with the savory ground beef and onions went so well together.  Not only was I a fan of the flavors, but I was kind of obsessed with the fact that my dinner was Halloween themed in color.  Orange sweet potatoes, yellow corn, and the brown from the ground beef.  This may have to be the official meal of Halloween :).

After dinner, friend Chris came over again and we sat watching the Yankees game, they lost, and I shed a tear or two but sucked it up and started my countdown until opening day 2011. I went to bed immediately following the final pitch, so I could get up and do my 10 mile training run before heading out to Villanova.

Th run started out really well.  Saturday morning it was a chilly 37 degrees, so I broke out my capris, and long sleeve to keep me warm for the first few miles.  Miles 1-6.5 were over before I knew it, and I was moving a long at a great pace.  When I saw my split after mile 5, I actually had to tell myself to slow down because I knew I would burn out.  Unfortunately, right around mile 6.5 my IT band really started to tighten up and cause that old familiar pain in my knee.  I still had 3.5 miles left to go, so I knew in order to get back to my house still walking, and capable of finishing the rest of my training I’d need to back it down.  From that point on, I implemented a stretch/walk/run plan when I felt my knee start to hurt, and you can see below how it affected my pace.

I still managed to finish at a 9:50 overall pace, which I am pretty happy with considering the last time I ran 10 miles was Broad Street 2009 and I finished that in 1:47 and change.  So my second ever 10 miler was about 9 minutes faster than my first, can’t feel bad about that!  My legs however can feel bad, and man do they.  They are still very sore today, and I think I need to take my foam roller to my calves and IT band.

After an ice bath, hot shower, and quickly getting ready, I hopped in my car and headed out to Villanova to meet up with my sister, Alex, and friend Erik for the Villanova vs. JMU game.  I got there are 1:15 and immediately set up in the tailgating parking lot for a day of fun.

I’m borderline obsessed with owning a bulldog someday and dressing it up in a JMU football jersey, so when I saw that cute little girl above chillin at a tailgate nearby I almost stole her.  Alex told me that if I stole the puppy though, that someone else would probably really miss her, so I settled for some puppy kisses and pictures with her.  Sadly my camera died at the end of the tailgate, so I have no other pictures from the weekend, but we went to the football game, JMU lost (booooooo), and then we hung out at my sister’s apartment resting for a bit before heading out for the night.

Our night involved drinks and dinner while watching the Phillies game, mug night at Erin’s Pub for the end of the Phillies game (another loss boooo, most boring World Series in history this year), and then a few games of beer pong at one of my sister’s friends houses.  It was fun to pretend like we were back in college, and Alex and I didn’t feel too old or out of place since it was Villanova’s alumni weekend.

Yesterday, Alex and I backed up our things and said goodbye to my sis and Villanova to head home for some football watching.  We stopped at a bar on the way so we both could watch our respective teams play (him the 49ers and me the Eagles) and sadly both our teams lost, but we were able to enjoy a delicious lunch of nachos, chicken tenders, and french fries.  Alex was on a train at 6:30 and back up to New York, and I spent the rest of my night on the couch watching a Keeping Up With the Kardashian’s marathon.

It was a fun and eventful weekend that has definitely left me struggling today, but it was worth it.  I can’t believe this weekend is Halloween already, so it will definitely be another busy one!  Happy Monday!
