Mostly Just a Recipe

Ok, so I am briefly going to talk about yesterday’s earthquake, but only because when I’m old and senile I want to be able to remember that, holy crap there was a pretty big earthquake on the East Coast!

They’ve been doing construction on my building since I started working here, so at first I thought it was just some giant construction truck driving by.  Then the rumbling got louder and pretty soon my whole desk and chair were shaking back and forth and shit was falling over.  Living and working so close to DC, and ya know on the East Coast, I first thought, “oh crap is someone bombing us?”  Then it stopped, and I decided, yup holy shit that was an earthquake.  It was pretty crazy, but it was pretty much back to work as usual once everyone got over their  initial shock.

I’m well aware our little natural disaster yesterday is nothing compared to things that have gone on in other parts of the world lately, and that there may have been some overreaction, but it’s still very unusual for the DC area to have an earthquake and this one just so happened to be the largest ever to hit the area.  Yikes!  Now, who wants to come to my hurricane party this weekend?

Prior to the earthquake drama yesterday, I managed to escape my desk for a little while and hit the gym.  A very ugly 30 minute run, followed by some abs and push-ups.  I seriously need to get my running endurance back, you know it’s bad when 3.3 miles feel rough.

Alright, now, two recipes coming at ya.  It was requested I post the Chive and Sour Cream Mashed Potatoes recipe, and it really was super easy.

Chive and Sour Cream Mashed Potatoes

Sour Cream

Peel, cut, and quarter the potatoes into equal size pieces.  I usually use 1-2 potatoes per person depending on the size.  Place the potatoes in a large pot, cover with cold water, bring to a boil, and then simmer and cook until you can easily poke the potatoes with a fork.  Drain the potatoes in a colander, and make sure your pot is completely dry before returning the potatoes to it.  Mash the potatoes in any way you see fit.  I use a handy dandy potato masher, the roommate likes to use the hand mixer, my mother uses a potato ricer.  I personally think the masher is the quickest and most effective.  Here’s where it gets fun, since this recipe involves no measuring whatsoever.  Add in your butter, when all was said and done I used 3-4 tablespoons, stir the butter around to melt in the potatoes.  Add the sour cream a little at a time until you get the creaminess and taste you are looking for.  I believe I used about 1 cup of sour cream.  Have your roommate chop the chives while you are stirring the mashed potatoes, then throw in about two handfuls of them.  Add salt and pepper to taste.  Done!

Eh, I know I said two recipes, but this post is already really long, so I’ll save the other one for another day.  Happy Wednesday fools!

Date Night

Last night I had a very enjoyable date with myself where I enjoyed an entire frozen pizza, a bottle of Pinot Grigio, and the movie Beastly.  I am the epitome of a healthy living blogger people, take notes.  I’m not even talking one of those smallish frozen pizzas, I ate an entire Red Baron Supreme Pizza last night, and I wasn’t even that full after.  It did have a thin crust though.   The wine didn’t even give me a buzz, I have issues, but that’s a post for another day.

And the movie?  Surprisingly not that bad.  I randomly signed up for Netflix on Monday and added this to my queue, yesterday it arrived.  To tell you the truth, I kind of wanted to see it when it was out in theaters but never got around to it, and the $5.99 for Comcast On Demand HD movies was getting out of control.  So yeah, the movie pretty closely follows the Beauty and the Beast story line, with some modernization thrown in there.  Totally believe MK Olson as the witch though, and you can still tell Alex Pettyfer is sexy even when in Beast mode.  Anyway, I liked it, but glad I didn’t pay to see it in theaters.

Let’s see what else did I do yesterday… 1.5 mile run followed by back and biceps workout.  The 1.5 miles was in 13ish minutes, I forgot to check, and the lifting was pretty standard.  Today’s lunch time class at the gym is called Simply Strength, I might check it out, depends on how lazy I’m feeling at noon.  Tomorrow’s class is called Power Hour, although I doubt it’s the kind of power hour I wish it was.  For my birthday two years ago I made an awesome Michael Jackson power hour, it was fantastic.

An update on the computer sitch, apparently my IP address is registering as coming from the UK.  I have no idea what my work did over the weekend that suddenly switched it to over there because for the past 7 months it was definitely a US IP address, but I’m not happy.  If I’m staring at a computer screen all day, formatting word documents (not content just aesthetically) I need some background noise!  Waaaaaaaaaaaah.

Alright, whatever, happy Thursday.  What are you getting into this weekend?  I really don’t want to do anything, I don’t even want to go to my pool because of it’s annoying party vibe.  I’m such a grump.

Time to Celebrate!

Helloooo July, does anyone else feel like it was just Memorial Day, and now it’s 4th of July?  Seriously, what happened to June?  Anyway, I’m crossing my fingers for a 2 pm closing to kick off this long holiday weekend.  The roommates and I, along with some other JMUers are off to Baltimore tomorrow for some fun, on/near the water.

Yesterday I got in a 4 mile run at lunch, 9:09 pace, and then looked like a lobster at work for the next hour.  The right side of my headphones has officially stopped producing noise, so it’s time to buy some new earbuds.  These lasted two years I wanna say, so that’s pretty good.  I cannot say the same thing for my Nike iPod armband, which is almost a year old and falling apart.  Guess I should get a new one of those also.

So my anti-socialness struck again last night.  When I got home from work, our friend Will was sitting on the couch having a beer with one of the roommates.  Will’s in the Army and lives in Tennessee somewhere right now, but is currently up visiting.  They were going out for some dinner and drinks with a few other friends, and I turned down the invite to join.  Instead I sat home watching Going the Distance, which just made me sad.  I need to work on my socializing skills.

In honor of the holiday weekend, today I decided to dress like I was going sailing.  Wishful thinking I suppose.
