Two in a Row

Weeeeeeeeeeee, it’s Thursday and I get to leave at noon tomorrow, and early today but only for a doctor’s appointment so that’s not too exciting.  Yesterday wasn’t too bad, as far as Wednesdays go, I had a steady flow of work to keep me busy and I got a nice lunch workout in.  33 minutes on the elliptical followed by a leg workout.

Surprisingly my legs are not sore today, so I think I need to add some more weight to everything, and I also think I’m going to keep doing regular squats and dead lifts, I dig those.

I know what you’re thinking, holy shit she made dinner two nights in a row!  I know, I’m pretty shocked myself, but I bought all this delicious food and I really wanted to eat it, 87 degree kitchen or not.  Plus Adrienne was already cooking, the oven and stove were on, it was then or never.

Oven roasted zucchini tossed in a bag of olive oil, garlic powder, onion powder, seasoned salt, and pepper, Trader Joe’s veggie fried rice, and a chicken breast marinated in Lawry’s Caribbean Jerk.  That shit is still my favorite.  I was sweating like a mad man after the short time I stood outside taking those pictures.

After dinner Dar and I spent the evening chatting over Skype and looking at houses together.  That’s always interesting, he always sees the potential in houses where I tend to just see the ugly ass kitchen with a linoleum floor and white cabinets.  He also once told me I wasn’t allowed to ask him to stain cabinets because he hates doing it, so I tend to get whiny quickly.  Luckily he’s known me for 10 years and handles it pretty well.

One of the good things about dating the same person you dated 10 years ago, is they know everything about you.  One of the bad things is they know everything about you.  Dar has a habit of bringing up things I did 8, 7, 6, etc years ago (uuh I was a pretty big asshole when we were breaking up) and relating them to now.  And I’m like come on dude, I was 18, that was 7 yearsssssss agoooo, and I’ve done NOTHING to make you think that I’m anything like that now.  What’s the statute of limitations on arguments, haha can I stop him from bringing old shit up?  Is this what marriage is like?  I thought it was supposed to be women who never forget crap like this? Sigh.

On a completely different topic, can someone tell me where my boobs went?  Because I swear they were here a few months ago.

Happy New Year!

Happy 2011 everyone!  I hope you all had a great New Years Eve and rang in 2011 with the ones you love.  My NYE started off with our roommate celebration of Christmas.  In order to make Christmas last just a little bit longer, the roommates and I decided to celebrate ours and exchange gifts on New Years Eve morning.

After we exchanged gifts, Dani and Adrienne hit the road for Pittsburgh, and I started prepping for my night.  I even used my new Kitchen Aid Mixer and whipped up a batch of Pumpkin Chocolate Chip Cookies.  Not surprisingly, Filet stuffed with Lobster and Asparagus won the majority of votes in my poll, and it was really what I wanted anyway so that is what my New Years Eve meal was.

I know it sounds fancy and complicated, but I promise it’s super easy!  First thing is head over to your local grocery store pick out your pieces of filet, smile nicely at the man behind the meat counter and ask him to pretty please open the package, butterfly the meat, and reseal it for you.

Press the meat out even thinner with your hands, then season however you desire.  I just used a little salt and pepper.  Pick up your lobster tails, if you’re lucky they’ll even be on sale like mine were!

Throw a big pot of water on to boil, and while you’re waiting utilize that same pot to steam your asparagus stalks.

Once, your pot of water has come to a boil, drop in the lobster tails for about five minutes, they also cook in the oven so you just want them cooked enough to get out of the shell.

While that is cooking, prepare your butter and lemon juice for drizzling over top of the lobster tails.

Once the lobster tails and asparagus are cooked, shell the lobster, split the tail in half length wise, place them on one side of your piece of filet.

Drizzle (or pour) the lemon juice and butter over the asparagus and lobster.  Get ready to roll them up and tie together, you might need an extra set of hands.





Place the pieces of filet on a rack in a roasting pan, and you’re ready to go.

Into the oven at 425 degrees (I actually ended up lowering that to 375), for about 20-30 minutes depending on how thick your slices of filet are.

Eat up and enjoy!  So, so, so easy, and definitely impresses and pleases a crowd.

Filet Stuffed with Lobster Tails and Asparagus

  • 2 Lobster Tails
  • 2 pieces of filet, butterflied
  • 3 Tbsp lemon juice
  • 1/3 cup butter
  • Asparagus
  • butchers twine
  • salt and pepper

Preheat your oven to 375 degrees.  Press your butterflied filets out thin with your fingers, season with salt and pepper.  Bring a pot of water to a boil, add the lobster tails, cook for about 5 minutes.  Steam the asparagus over the water while it boils, this only takes a few minutes.  Remove the lobster tails from their shell, cut in half length wise, and place on one side of the meat.  Add the asparagus, and drizzle your lemon juice and butter mixture over top.  Fold the other side over, and tie closed with butchers twine.  Place everything on a rack in a roasting pan, and cook for about 20-30 minutes.

Lens Error

I had a minor melt down last night when I was trying to take pictures of my dinner, and all my camera kept telling me was “lens error restart camera”.  I tried, and tried, and tried, and tried, no luck.  With three weddings coming up, now is not the time for my camera to break.  Ugh.

Anyways, before the camera catastrophe the bf, sister, and I all went to the gym together.  I did 5 miles in 45 minutes, so about a 9 min pace, the last time I ran 5 miles was January 25, and then a week later I was injured.  I’m glad to be building up my distance slowly this time around, and all is feeling good with my IT Band.  Then I tried to show the bf the ab moves I do.  He lost interest in like three minutes and went back to doing his own thing though.

After the gym, I quickly put together dinner for the three of us.  My Parmesan Crusted Chicken, stuffed with Asparagus and Cheese and a side of Uncle Ben’s Rice Au Gratin.  Since my camera hated me last night I don’t have any pictures, but here is an older one of the chicken.
