Stuffing My Face

Heyo, what’s up? I stayed home sick from work on Friday, so I’m trying to get back into the swing of things and catch up with emails and work.  So, my last post was about how my cat mysteriously found her way outside Thursday morning, and thank god I stayed home Friday because she did it three more times.  After she went missing for the third time before noon, I scoured the house looking for openings and then finally just sat down to watch her.  Eventually she got up from her nap on the couch and meandered her way back to the laundry room.  First she had to slide the door to the laundry room open with her paw, and then I watched her do this:

Mystery solved,  and that doggy door is now taped closed.  The rest of the day was spent relaxing while my sister napped (she worked night shift and drove down early Friday morning) and grocery shopping for our weekend.  I had a fantastic weekend with my sis and I wish she could have stayed longer.

We cooked a crap load of food, watched three movies (I Don’t Know How She Does It, Moneyball, and Sarah’s Key), ventured into DC, and splurged on a dinner out at Dogfish where we contemplated ordering everything on the menu.

Both recipes I found on Pinterest, and you can find my board here to see the original recipes.  Everything was amazingly delicious and fantastic.  My sis left to head back to PA yesterday around 4, and I spent the rest of the day and evening making my way through leftovers and chicken wings.  It was a delightful weekend, and now I can really start to look forward to my trip to the mid-west next week!

I Need to Prove Myself

Shock of all shocks, it’s raining again.  September and October thus far have been pretty damn depressing.  I’m ready for some sunshine, crisp fall days, and crunchy leaves.  This week has been mostly uneventful in terms of life and workouts, the most exciting thing was that recipe I posted yesterday.  Although I think the roommates and I are having a make your own calzone night tonight, so that should be fun.

I did try a new cardio workout on Tuesday that I ripped out of Fitness magazine though.  It looked relatively easy and figured it would help ward of treadmill boredom.

Surprise! Not so easy.  In fact, I damn near tripped and fell on my face during my last “hard” interval because my legs were so tired and heavy.  Easy: 4.5 mph, Moderate: 6.5 mph, Hard: 7.5 mph.  I followed that up with some ab exercises on the exercise ball, planks, and push-ups.  Yesterday’s workout was 50 minutes on the elliptical while watching Giada prepare some delicious looking meals.  Also, her baby is adorable.

So, Darren arrives next Thursday for his visit, and despite the awesome fucking meal I cooked him on New Years Eve last year he doesn’t really believe I can cook.  He said it would be hard to mess up lobster and filet, I disagree, but that’s neither here nor there. In light of this, I’ve decided I need to cook something awesome for dinner for Thursday night, but he won’t tell me what he wants.  He says he likes everything.  I’m thinking lasagna, one because I’ve been craving it like a mad woman, two it’s one of the things I make that always is raved about, and three I think it’s impressive to serve someone.  Right?  I would do that Engagement Chicken nonsense, but I eat roasted chicken EVERY SINGLE DAY.  Any other suggestions?

Also, I think this sounds like the best exercise class EVER!  Peace.

Grillin’ Season

Good news!  I remembered my purse this morning, and I no longer feel like death.  I spent the majority of yesterday trying to figure out if I was going to throw up on my desk and freezing.  No bueno.  I hightailed it home after work and immediately crawled into my bed and stayed there until my alarm went off at 7:15 this morning, and now I’m feeling much better.  My stomach still feels a little off though, I don’t know, whatever.

With this weekend being Memorial Day and all and the official start of summer weekends and bbqs let’s chat about your favorite summer bbq foods!  Sunday I’m heading to a “Crab Fest” bbq and while our gracious host is providing the main dish, she’s asked us all to supply the sides.

One of my favorite summer dishes is this amazing Black Bean and Corn Salsa.  I made it for the first time last summer, and it is always a huge hit.  Minus the cilantro, I don’t really like cilantro.  This is what I’m bringing on Sunday.

And what’s a bbq without a delicious summertime cocktail?  This Sangria is always a crowd pleaser with both those who like red and white wines, plus it has rum, which is always a nice surprise :).

Now don’t get me wrong, I dig a nice juicy cheeseburger as much as the next person, but sometimes an amazingly seasoned Turkey burger is more up my alley.  These Turkey burgs, combine peppers, onions, garlic and Worcestershire all in the patty, which fills every bite with flavor.

Finally, it’s not unusual to find mayo loaded pasta and potato salads at every bbq, but I personally prefer a version that includes tortellini and Italian dressing.  Season it with McCormick’s Pasta Salad Seasoning and you’re good to go.  I also make a version of this with Riggatoni, cucumber, and carrots.
