Is there anything better than waking up in the morning, calling your employers emergency hot line and hearing “Due to a snow emergency all facilities are closed today”? Well at 6:20 this morning that was exactly what I was hoping to hear. Which is why I’m so late with this post today, I just pulled myself out of bed and cooked a delicious breakfast for the bf and I. He decided to take my advice and come last night, so now we have the whole day together!
Whenever it snows, I get the urge to cook comfort food, and last night was no exception. Also, I know this is one of the bf’s favorite meals. Meat loaf, mashed potatoes, and broccoli. Not healthy, by any means, especially since we were out of milk and I may have used heavy cream in the mashed potatoes. Umm, oh well, don’t tell anyone else.
Anytime I make meatloaf, I use the same recipe from an ancient Campbell’s cookbook. I think this may have been one of the first cookbooks my mom ever had. It has a spiral binding, and the pages are all yellow, and I love it. It’s called A Campbell’s Cookbook Cooking with Soup.
Old Fashion Meat Loaf
- 1 can cream of Tomato Soup
- 2 lbs ground beef (98% extra lean in my case)
- 1/2 cup fine dry bread crumbs
- 1/2 cup chopped onion
- 1 tbsp chopped parsley
- 1 egg, slightly beaten
- 1 tsp salt
- dash pepper
Combine all ingredients, mix thoroughly. SHape firmly into a loaf; place in shallow baking pan. Bake in a 350 degree oven 1 1/4 hours. After it has cooked for an hour, you can garnish with cheese or tomato slices, obviously I opted for cheese and bake for 15 more minutes. The recipe says it makes 8 servings, but this fed 4, and there is one piece left. So yummy.
The rest of the night was spent on the couch with the bf, the Olympics, and a few glasses of wine. A perfect Thursday if you ask me. In honor of todays snow day, I decided to make breakfast, which I usually don’t do. We had omelette’s with spinach, onion, bacon, and cheddar cheese.
Alex’s three egg omlette, already smothered in ketchup. He was patiently waiting to take a bite while I took pictures, and by patiently I mean sitting there staring at me telling me to hurry up that he was starving.
My 2 egg omlette, you can actually see the fillings in this one. For some reason breakfast like this never keeps me very full for long, and I am almost ready for lunch now. At least there are tons of leftovers in my fridge. I might have to venture out into the snow and trek across the street for some Starbucks. It is Friday after all. I hope everyone has a great day!
