The bf went back to NYC last night, but before he left we had a delicious dinner of Crock Pot Chicken Tacos.  All you do is mix together a jar of salsa and taco seasoning, throw it in the pot with some chicken and let it cook for a few hours.  So easy, and so good.  Unfortunately my camera still isn’t working, so I have no pictures of it :(.  You’ll just have to take my word for it that they were delicious.

I ended up skipping yoga last night so that we could eat dinner, and still have time to get him on a somewhat early train back to the big apple.  Then I came home and vegged on the couch with a few glasses of wine watching all my favorite shows.  An episode of Glee that I had somehow never seen before, which is completely shocking, Make it or Break it, and The Rachel Zoe Project.  I’m such a dork, but I got really excited when I realized that last nights episode of Rachel Zoe was during NYC Fashion Week last February and that I was there that week.  It also happened to be during one of the many blizzards of the winter.  I am not looking forward to another NYC winter, so cold, with so much wet feet.

Well, at least it is already Wednesday right?  I’m actually headed back up to NYC to see the bf this weekend (I think this might be the shortest amount of time not seeing each other) to celebrate our 1 year anniversary.  We’re having dinner at The Park, which I think looks really neat and then who knows what else.

Sorry this post is so visually boring, hopefully I’ll have my camera up and running again soon.  If not I might be forced to break out my old one from my photojournalism class in college that I have no idea how to use anymore, and likes to eat batteries for breakfast.  Happy Wednesday!

Lens Error

I had a minor melt down last night when I was trying to take pictures of my dinner, and all my camera kept telling me was “lens error restart camera”.  I tried, and tried, and tried, and tried, no luck.  With three weddings coming up, now is not the time for my camera to break.  Ugh.

Anyways, before the camera catastrophe the bf, sister, and I all went to the gym together.  I did 5 miles in 45 minutes, so about a 9 min pace, the last time I ran 5 miles was January 25, and then a week later I was injured.  I’m glad to be building up my distance slowly this time around, and all is feeling good with my IT Band.  Then I tried to show the bf the ab moves I do.  He lost interest in like three minutes and went back to doing his own thing though.

After the gym, I quickly put together dinner for the three of us.  My Parmesan Crusted Chicken, stuffed with Asparagus and Cheese and a side of Uncle Ben’s Rice Au Gratin.  Since my camera hated me last night I don’t have any pictures, but here is an older one of the chicken.

My First Time

No, not that first time, pervs.  My first time doing a giveaway!  Details about it to come at the bottom of this post, but it involves some great cookware from the Le Creuset line!  A perfect fit for this blog and my love of cooking ;).  How was everyones weekend?  Did you miss my post about my adventures in baking?  Check it out here.

Saturday night, the bf, sister, and I went out to our favorite BYOB Chinese restaurant, Duck Sauce, in Newtown.  I know I have talked about it on here before, but it is seriously amazing, and relatively cheap.  We started out with two appetizers, the Chicken Lettuce Wraps and Steamed Pork Dumplings.

Then for our main course, the three of us split an order of the Orange Beef and Chicken Lo Mein.

Everything was so good, and I think for the first time we didn’t have any leftovers to bring home.  Which meant we obviously needed to walk around for a little bit after dinner to digest our meals.


After dinner we decided to head to one of the bars near our house for a little bit before going home.  They have a $5 pitcher special that is sometimes just too good to pass up.  We had two before heading home where we proceeded to drink and hang out a little more.  Needless to say yesterday was a slow one.  I never even got dressed and just lounged on the couch all day.  It was delightful.  I also ate a lot of pizza, which was also delightful.  Now it is Monday again, and I’m exhausted.  The bf is still sound asleep in bed, and I am so jealous of him.
