Another Day Inside

Well I was seriously hoping for a delayed opening today, but the freezing rain the news was calling for didn’t really end up freezing on anything so here I am, on time.  As you already know, my weekend was completely uneventful and spent in my house crafting.  I am a nerd.

Yesterday was also spent in the house, only instead of making crafts, I made food.  First on the agenda was Egg Muffins for breakfasts this week.  Since the holidays I’d kind of gotten away from preparing all my meals and was frequenting the omelet station in the cafeteria all too often.  I made my Egg Muffins the exact same way I made my Egg Bake, just in a muffin tin instead of casserole dish.

First order of business was to cook up the 10 pieces of bacon and chop up the garlic and peppers.  Once the peppers were diced nice and small I added them to the bowl where I had 10 eggs whisked and waiting.

I cut the bacon up put the pieces in the bottom of the muffin tin.  I only meant to do 10, but apparently I forgot how to count, so there’s 11.  This ended up working out fine, because I had enough egg mixture to fill 11.

Two pieces of sharp cheddar on top of the bacon, then I scooped the egg mixture on top.  The cooked at 325 for 20 minutes and puffed up and overflowed nicely.

An easy and delicious breakfast to get me through the week!  After my breakfasts were prepared, I also made dinner for Sunday, Monday, Tuesday, and Wednesday.  I picked up the ingredients for sausage, onions, and peppers last week at the store, so that’s what was on the menu.  I made it the exact same way as I posted here, except I kept the chicken sausages whole and ate a nice crusty sandwich.  Delicious.

Alright, well try to have a good Monday!  I can’t believe it’s already the end of January.

It Just Keeps Coming

So who on the East Coast is ready for more natural disaster related fun this weekend?!?

I know I can’t wait to break out my Hurricane 40s and party like it’s 2003.  Oh, that’s how we celebrated Hurricane Isabel back then, as cute little college Freshmen.  Living in a basement dorm room during the worst hurricane to hit Virginia in a long time was really fun.  I got to watch the water rise and rise outside my window until it stopped just below the actual frame. Fun times!

No but seriously, I know of a few people getting married this weekend and I feel so bad for them.  I would cry, especially because I think they were originally scheduled for outdoors.  At least I hear rain on your wedding day is good luck, so a hurricane must be super lucky!

Anyway, on to yesterdays activities.  I did a full body weights workout during lunch yesterday, which has left me somewhat sore today and the reason I was contemplating eating my arm off at 3:30 yesterday afternoon.  Sadly, dinner was extremely far away because as soon as I walked in the door after work, the roommates and I were back out again to go look at bridesmaids dresses.  Our bride wants to order them all together, so we needed to decide on final styles and sizes, which ended up being a disaster.

We went to a different store to see if they had more of a selection and the lady was so rude! Once she found out we wouldn’t be ordering from there she was completely unhelpful and left us to sort through the rack of dresses ourselves.  Then she tried to tell us it would be $20 to get measured without ordering anything.  Um no thanks, I have measuring tape, I’ll do it myself.  She was awful, the three of us left so annoyed, but at least we were all able to decide on final dresses.  Anyway, don’t ever go to Katherine’s Bridal in Alexandria.  The worst.

Finally, here’s the other recipe I said I was going to post yesterday.  It’s not really a recipe, but more of an improvement of the egg bake I made last week that wasn’t quite right.  This turned out so much better and I am loving it.

Bacon and Veggie Egg Bake

Olive Oil
1 Pepper
3/4 Large Onion
1 clove garlic
8 pieces of bacon
8 eggs
Salt and Pepper

Pre-heat the oven to 350 degrees. Cut up the 8 pieces of bacon into bite size pieces and cook in a large skillet.  I use scissors and just cut the bacon over the pan.  While the bacon is cooking, chop your pepper and onion into thin slices, and dice some garlic  Once the bacon is cooked, transfer it to a plate covered with a paper towel, and place another paper towel on top to absorb the grease.  Drain the remaining bacon grease out of your pan, give it a quick wipe down with a paper towel, add a little olive oil, and throw in your peppers, onions, and garlic.  While those are sauteing together, mix your eggs in a big bowl and add a little water.  Grease the bottoms and sides of a casserole dish with some butter or non-stick spray, and combine all of the ingredients together.  Sprinkle with salt and pepper, and then pop it into a 350 degree oven for 25 minutes.  Super easy, and now I have breakfast for the whole week.

Story Time

So this morning as I was driving to work listening to the country station as I do every morning, Zac Brown Band Colder Weather came on.  I love this song, have since the first time I heard it, mostly because it reminds me of my relationship, but probably not for the reason you might think.  Anyway, more on that in a minute.

Yesterday was a typical day, lunch time workout of 33 minutes on the elliptical and the core workout I’ve done every Thursday for the past few weeks.  And is it just me, or did Thursday afternoon just draaaaaaaaag on.  I remember looking at the clock at one point and being completely amazed that it was only 2 pm.  Either way, the day eventually ended and I made it home and tried to think of things to stuff in my face for dinner.

As you remember I made Black Bean and Corn Salsa for the Crab Fest on Sunday, and I made a shit ton of it.  Sadly I forgot that once people start to drink a lot, they tend to forget about all things that aren’t liquid and booze based, so I still have a shit ton of it.  That means I’m trying to eat it all before it goes bad, (twss?) so far it’s been the insides of a quesadilla and last night the fillings of an omelet.

With ketchup, because there’s not much I don’t eat without ketchup.  I also had a side of Alexia Sweet Potato Fries, because they’re delicious and addicting.

Things that take as little time to cook as possible the better, because even after I managed to hoist our air conditioner into the window yesterday, it was still 81 degrees in the kitchen.  Blech.  Anyway, I’ve decided I’m going shopping tonight, because I have zero cute summertime tops appropriate for work and weekends.  I’m wearing a green tank from JCrew today, the favorite tank, I need some new shit.

Anyway, back to what I was saying at the beginning of my post.  For whatever reason, some people in my life seem to think that Dar and I had this huge plan to get together at Christmas time, and had been trying to work that out for a while.  Not the case at all.  In fact, even as I was driving home to PA he was telling me he didn’t want to see me.  That he liked his life the way it was, only worrying and thinking about himself, and didn’t want seeing me to change that.  Nice right?

Still, I was persistent in my attempts that we could hang out and be friends and it would all be fine (ha!), which it was at first.  Then we actually got in a fight about something stupid, which left me crying and him talking loudly into the phone that this was exactly what he wanted to avoid, and why he didn’t want to see me in the first place.  Obviously we got over that fight, and my incredible irresistibleness (ha! again) won him over eventually, but lyrics from Colder Weather still hit home for me, especially since Dar has actually said that he doesn’t want to love me or want me, that life was much simpler before I came back into it, haha.
