Another Day Inside

Well I was seriously hoping for a delayed opening today, but the freezing rain the news was calling for didn’t really end up freezing on anything so here I am, on time.  As you already know, my weekend was completely uneventful and spent in my house crafting.  I am a nerd.

Yesterday was also spent in the house, only instead of making crafts, I made food.  First on the agenda was Egg Muffins for breakfasts this week.  Since the holidays I’d kind of gotten away from preparing all my meals and was frequenting the omelet station in the cafeteria all too often.  I made my Egg Muffins the exact same way I made my Egg Bake, just in a muffin tin instead of casserole dish.

First order of business was to cook up the 10 pieces of bacon and chop up the garlic and peppers.  Once the peppers were diced nice and small I added them to the bowl where I had 10 eggs whisked and waiting.

I cut the bacon up put the pieces in the bottom of the muffin tin.  I only meant to do 10, but apparently I forgot how to count, so there’s 11.  This ended up working out fine, because I had enough egg mixture to fill 11.

Two pieces of sharp cheddar on top of the bacon, then I scooped the egg mixture on top.  The cooked at 325 for 20 minutes and puffed up and overflowed nicely.

An easy and delicious breakfast to get me through the week!  After my breakfasts were prepared, I also made dinner for Sunday, Monday, Tuesday, and Wednesday.  I picked up the ingredients for sausage, onions, and peppers last week at the store, so that’s what was on the menu.  I made it the exact same way as I posted here, except I kept the chicken sausages whole and ate a nice crusty sandwich.  Delicious.

Alright, well try to have a good Monday!  I can’t believe it’s already the end of January.

In Which, I Put Everything off Until Monday Night

In an effort to save money and be relatively health conscious, I bring a giant bag of food to work every week.  This bag of food typically includes, breakfast, snacks, and lunch all prepared at home and ready to eat throughout the work week.  This means I spend a substantial amount of time in my kitchen doing food prep at the beginning of the week.  That night was last night.  So for fun, here’s a list of things I should do on Sunday, but never get to until Monday.

  1. Decide what I want to eat for dinner every night that week.  Lately this is alternating between stuffed peppers, shepherds pie, and meatloaf.  I decided on meatloaf for this week.
  2. Make a mental grocery list, and think about what main ingredients I might be missing for the dinner I decided upon.  This week, a can of tomato soup.
  3. Head to the grocery store after work and stock up on the usual things:
  • Spinach
  • Lettuce
  • Peppers
  • Cucumber
  • Sweet Potatoes
  • Peaches or Apples
  • R0tissiere Chicken (last night they had just a breast available, score!)
  • Ground Beef or Turkey
  • Eggs
  • Bacon
  • Coffee Creamer (side note, Pumpkin Spice creamer is way better than Starbs PSL, and cheaper)
  • Frozen veggie
  1. Go home, unpack, make dinner. Luckily last night, throwing the meatloaf together was relatively quick and I had it in the oven in about 15 minutes.  While it cooked away for the next hour I prepared the rest of my food.
  2. Chopped up onion and peppers for the egg bake, saute.  Cut up 8 pieces of bacon, scrambled 8 eggs (10 if eating for all 5 days).
  3. Once everything was cooked (peppers,onion, bacon) I transferred it all to a large casserole dish and put it in the oven once the meatloaf was done.
  4. Ground coffee beans to make a giant pitcher of iced coffee for the week.
  5. Tore apart the Rotisierre Chicken breast and put the pieces into Tupperware.
  6. Microwaved some frozen green beans to go with my meatloaf.
  7. Ate dinner at 8 pm exhausted and sweaty.

So, now I’m set for the week, although this typically means I’m coffeeless and mealless on Monday’s at work.  Thankfully I had a lunchtime meeting yesterday where food was provided.  I really need to work on getting my act together and having all this done on Sundays.  I feel as though the beginning of my week would feel much less stressful.  Maybe someday.

I watched Fox’s new show, Terra Nova, while eating last night and I *think* I like it?  I definitely sat there easily enough for two hours watching.  Maybe it will fill the void LOST ending left in my TV schedule.  We’ll see.  Anywho, happy Tuesday.  What does your food prep for a week look like?

 

Egg… Something

So this week really seems to be flying by, perhaps since I was asleep for the first few days of it?  One week ago I was getting ready to fly out to Wisconsin to visit my lovah, so what’s that mean, like 9 weeks to go?  Waaaaaaaah.  I hate wishing away time like this, but it’s kind of hard not too.  Oh well.

Anyway, I cooked last night.  Nothing exciting, just some sort of frittata/casserole/egg bake thing.  It was good, but not perfect, I need to mess with the ingredients more.

I’m trying to remember exactly how many eggs this was, I think it was 9, because I ate 3 in an omelet the other night.  So, 9 eggs, spinach, red, orange, and yellow pepper, zucchini, and some frozen turkey meatballs.  I think the turkey meatballs were the flavor that was off.  Not spicy enough, and not the right flavor to go with the eggs.  I think next time I’d use either bacon or regular sausage.

I sautéed the peppers, zucchini, and spinach before stirring them into the eggs along with some garlic, pepper, sea salt, and onion powder.  I don’t have an oven safe pan, so I just poured everything into a giant Pyrex bowel and popped it into a 350 degree oven.  Thirty-five minutes later it was done.

After another five minutes of cooling time, I could finally dive in and eat dinner.

It was good, and don’t get me wrong, I will eat the remaining three slices, but like I said something was a little off.  The rest of the night was relatively uneventful, and involved a few episodes of Mad Men.  Shocking, I know.

Due to Tuesday night’s activities, I was not feeling a workout yesterday, but because of a company lunch outing today I knew I had to get off my ass and go.  It wasn’t the greatest workout, but it was better than nothing I supposed.  18 minutes on the stair climber thingy, followed by some weights.  Leg press, calf lifts, bicep curls, dumbbell rows, tricep kickbacks, and dumbbell push press.  I was going to do some Spartacus circuits, but just didn’t have the energy.  Oh well.

I’m heading home tomorrow for the weekend to booze my face off while celebrating Michelle’s upcoming wedding, so that should be fun.  Here’s to hoping there’s no traffic!  Oh, and I totally still need to buy her a shower gift, oops.  See ya later!
