Starting Already

What you ask?  The anxiety filled, sleepless nights that accompany any big event.  I woke up at 2:22 am last night, and didn’t fall back asleep until sometime after 3 am.  When I finally did fall asleep, do you know what I dreamed about?  The half marathon Sunday.  In my dream/nightmare, I was at the expo picking up my bib and other crap, and got distracted by a Lululemon vendor.  Obviously a significant amount of time passed, and before I knew it there was 15 minutes until the race started.  Yup, in my dream/nightmare the expo was the same morning as the race.  Anyway, I was rushed to the start and didn’t get to go to the bathroom.  Sigh.  Three more nights of this.

Prior to my sleepless night full of tossing and turning, I got a great tempo run in, cooked an awesome dinner, and watched The Pioneer Woman kick ass on Throwdown with Bobby Flay.  My second to last run of my training plan was a 5 mile tempo run, with 3 miles at 8:57 pace.

  • 1 mile warm-up @ about 11 min/mile
  • 2 miles @ 8:57 pace
  • 1 mile ranging from 8:49-7:30 pace
  • 1 mile cool-down @ 10 min/mile
  • 5 miles in 46:38

The run felt pretty good, one more 3 miler tonight and then the race on Sunday, yikes!  Oh and in case you’re interested in receiving text message updates on my progress during the race, here is the link to sign up to track me.  It doesn’t always work, but it’s free, so it’s worth a shot I suppose.

After my work-out, I came home and made one of my favorite dinners.  I’d sort of been cheating on my chicken lo mein recipe lately with an easier version that just involved using a teriyaki marinade, but last night I made the real thing.

This recipe is super easy, and I originally only made it with tofu, but last night I mixed it up with some chicken.  The best part about this recipe is that you can throw in whatever veggies you happen to have in the fridge.  Here’s how it went for me last night

  • 3 cups of chicken broth
  • 1/2  cup apple cider vinegar or rice wine vinegar
  • 8 tsps low sodium soy sauce
  • Sesame oil (I never measure, just kind of judge by taste and smell)
  • 1 medium onion, chopped
  • 1 cup diced carrot
  • broccoli
  • corn
  • snow peas
  • 3 boneless/skinless chicken breasts
  • 3 servings of your choice of noodle (I used Trader Joe’s Rice Sticks)
  • Red pepper flakes

Cut up your chicken breasts into equal sized pieces, place in bowl with 3 tsps of soy sauce and some sesame oil, let marinate.  Into a large sauce pan, add about 2 cups of chicken broth and 3 tsps of soy sauce.  Let it start to simmer, and then add your chicken breasts.  Once the chicken has started to cook, and is no longer pink, add in your vegetables and vinegar.  Let the whole thing simmer, covered, for about 6 minutes.

Add the noodles, and remaining chicken broth if necessary.  At this point, you can also taste your sauce and add more soy sauce and sesame oil if you want.  Stir in the noodles, cover, and allow to simmer until most of the liquid is absorbed and the noodles are cooked.  If you are using regular spaghetti noodles, you may need to add more liquid.  Once the noodles are cooked, and the liquid absorbed, remove your pan from heat, sprinkle with red pepper flakes, cover and let it sit for 5 minutes.  This will give the red pepper a chance to meld with all the other ingredients.  Then you’re good to serve!

Well, it’s finally Thursday, only one more day of work after this!  Oh, and Pottery Barn called me yesterday to set up delivery and my bed, dresser, and night table arrive in VA on the 27th.  Just like me!  So excited.  Have a great one!

The Most Deer

So, driving into work this morning I encountered the cutest herd (is that what they’re called?) of deer!

That’s actually inside my work complex, I see at least one or two deer every day and I love them!  We have cows too, but that’s part of a farm that’s in front of my work.  No I don’t work on a farm, but my sister is convinced I do.

Yesterday afternoon it was downright chilly out, a mere 75 degrees, so I decided to take my running outside for maybe the second time in the entire month of August.  It was a good run, not a great run, but I was only about 7 seconds slower per mile than I am on the treadmill which I don’t think is too bad.  In all I did 3.8 miles in a little over 35 minutes for about a 9:12 pace.

For some reason when I run outside I get the worst pains in my right shoulder that I don’t get when I’m on the treadmill.  I think it’s probably because I keep my arms more relaxed on the treadmill so yesterday I tried to focus on using my right arm and not holding it stiff.  I still had the pains, but not really as bad. Also, the thing I hate most about running outside is that I’ll find my stride, be grooving along at a good pace, and then have to stop for a red light or railroad crossing.  It will take me a few minutes to get back into that stride, and then I’ll have to stop again.  Very frustrating.  Anyway, I definitely saw a pace below 9:00 on my Garmin a few times which is super exciting.  I have a feeling I’ll get to run outside more and more in the coming weeks, so hopefully me and my shoulder will get more used to it.

After my run, I heated up some leftover Zucchini Pepper Basil Pasta and topped it with some Mozzarella cheese.  Just as good as the day before :).

Then I proceeded to get packing.  I made a master list to go off of, and thanks for all your suggestions of things I might be forgetting.  Chargers were a good one, I typically end up grabbing my cell charger at the last-minute.  Here’s my list.

Alex is going to make fun of me now, but whatever I probably won’t forget anything.  And, the suitcase mostly packed.  Still need to throw in toiletries and my makeup bag.

My outfits for the wedding and rehearsal are in the top section because it has a thing to hang stuff and I left them on hangers.  The Tiffany’s box is holding all my jewelry, which I may rethink packing and just bring in my carry on, I’m paranoid like that.  And yes, that is a huge suitcase for one weekend, but I like the compartment it has that allows you to keep stuff on a hanger.  I’m trying to decide what movies to bring to watch on the plane, I brought a SATC series to watch on the train last weekend, but felt all awkward when the naked scenes came up so preferably something without nudity.  Suggestions?

Check out this weirdo dream I had last night.  As I told you all, I signed up for the Philly half in November and last night I had a dream about it.  Except it wasn’t in Philly, I actually think it was DC, and some of you all were there.  Haha, I specifically remember running with Kacy, but I know there were more of you.  The best part, we somehow ran past Kleinfeld, you know the bridal salon, and all of us decided to go in there and try on dresses.  In the middle of our half marathon.  There was more to the dream, like it started raining and we all took our shoes off and started running barefoot, then I lost my shoes when I tried to leave Kleinfeld.  It was bizarre.  Eventually we stopped trying on dresses and got back to our half, haha so weird.  Let’s see someone analyze that.

Alright everyone, I hope you have a great day.  I’m hoping to be able to post either from the airport tomorrow morning or from the plane, but if I can’t don’t hold it against me.  I swear I’ll be back to check in over the weekend at some point!

Oh hey Mr. T-Rex

Last night I had by far the most bizzaro dream that I have ever had, and since it’s so rare that I remember them this well I’m going to share it.

Ok, so it was like living in Land of the Lost (was anyone obsessed with that show like I was, not the Will Ferrell movie) and all  of a sudden the alarm indication a T-Rex attack went off (influences from LOST?) and everyone sprang into action.  Apparently my family were the main T-Rex hunters, not me I hid in my room peering out the window, and they gathered all their hunting materials.  As I’m staring out my window, I hear the T-Rex approaching, and then there it is in my backyard where stupidly there are still people swimming.  I guess they thought maybe they were safe since T-Rex’s can’t swim?  Well this one could, it jumped into the pool, and I immediately thought YES they can’t swim, it will die now!  Except there it went with its little minuscule arms swimming towards the people (the image of this in my head is still cracking me up, and also apparently the pool was so deep that a huge dinosaur couldn’t stand).  Sadly, it managed to grab one of the people with its little hand, RIP person I dreamed got eaten by a dinosaur, whoever you were.

Then, the T-Rex disappeared, so I ran to my backyard where my mom and some dude were discussing a plan of attack, when all of a sudden the dude got snagged by the T-Rex!  RIP other dude.  His gun/spear thing fell into my hands, and I took over his roll of dinosaur hunter.  My mom and I split up and I ran around the front of the house and inside standing just inside the door.  The T-Rex came around the corner, and started searching around the front of the house for me, snout practically inside the front door.  I knew that if I stood perfectly still it would not see me, come on we’ve all seen Jurassic Park, it gave up and stood up straight giving me a clear shot at its chest.  I quickly raised my spear gun and shot, oh by the way the spear gun was loaded with scissors, and hit it directly in the chest.  Yes!  Except, nothing happened, the T-Rex still stood there very much alive.  Shit.  I bolted for my basement, slamming the door shut behind me and running down the stairs.  I ran to one of the small windows leading to the backyard, and began to work on prying it open to escape.  Then I woke up.

Sooo, um yeah, I have no idea.  I was trying to think if I ate anything weird last night, but I didn’t eat anything after my dinner.  I have no idea where that came from, I looked it up and here is what dreammoods.com said:

Anyway, on to more relevant things.  Last night I remade friends with my yoga dvd.  I considered doing the fully loaded workout, which is an hour instead of 30 some minutes, but then I remembered I hadn’t done yoga in about 3 weeks so I went with the short workout.  Thank god I did, I forgot how many stupid lunges, squats, and push-ups were involved.  Definitely feeling it today, which annoys me because pre-IT band the workout was getting easier.  Hey, did you know if you click on the “extras” selection on the main menu you can find extra things to do?  I figured that out last night, and did the 5 minute stretching extra that is included.  I really used to be much more flexible than I am, I wish I could still sit in a full straddle while watching TV and be comfortable.

Dinner was a variation of Wednesday’s, but I was annoyed with how difficult it was to eat, so I attempted to just fill half and fold it over.  It didn’t work, these tortillas are too small.  I ended up with two open faced quesadillas.  So maybe they are more like Mexican pizzas?

I added some corn last night also.  Just as delicious as the other night.  I knew I was going to have leftover black beans, and really had no idea what I was going to do with them.  Luckily, on her blog yesterday Kelly included a recipe for black bean burgers, and I decided to try them out.  I didn’t have quite the 2 cups of black beans left that the recipe called for,  so I threw in some corn.

After everything was mixed together in the food processor.

The recipe made four pretty little burger patties.  They almost look like real burgers.

And into the freezer for later use.  I’m pretty excited to try these, I am definitely becoming more adventurous in my old age.  There was a time when I wouldn’t eat anything but chicken.
