An early morning reflection

At 4 am this morning when I woke up and could not for the life of me fall back asleep, I got to thinking about some things. Before my injury, and subsequent 3 week break from running, I was constantly complaining about working out and having to go to the gym. Without fail every day around 3 or 3:30 I would start whining to my friends about how much I did not want to go to the gym, and how I wish I did not have to work out. It occurred to me that lately my attitude has been completely different, where I can’t wait to get in the gym, and I definitely cannot wait to be running again. So while annoying, at least I came away from this injury realizing just how much I was not appreciating the ability to work out and run every day. I hope as I get back into training for my upcoming race I can remember just how much I missed running as it gets harder and harder to push myself every day, and that I remember to be happy that I can in fact do these things. Just some sleep deprived thoughts to start you out with on this Sunday morning.

Last night for dinner I defrosted one of Kelly’s black bean burgers that I made the other night, and made some sweet potato french fries and roasted zucchini as sides. I used Tina‘s sweet potato fry recipe, and I have to say they were soooo good. That was my first time making them, and I will definitely be doing so again.

All together on the cookie sheet before going in the oven. I seasoned the zucchini with salt and pepper and a drizzle of olive oil. While I was cooking I got a text from a friend I hadn’t hung out with in awhile asking what I was up to, I said cooking dinner, and he asked if he could grab some grub and come eat with me. Sureeee why not, he tried to convince me to go out with him later, but I am an old lady and on the weekends I am not in NYC I like to stay home. I know, I’m so lame. Dinner all together on my plate;

My first experience with black bean burgers and sweet potato fries was a success, the burger was very good, and I still have three left, woooo! The rest of the night I spent on my couch watching the Olympics and the funniest episode of Keeping up with the Kardashians that I have ever seen. It’s the one when they are in Vegas for Kim’s birthday and Rob and Scott get absolutely tanked, and make huge fools of themselves. The best part is the end when Scott tries to come home and Kourtney changed the locks on him. So funny.

This morning I had my first experience with Greek yogurt. I saw Pomegranate Chobani in the yogurt section, and on a whim decided to buy it. It served as a nice little breakfast this morning.

Very different than my regular Activia, and I think I like it a lot better. It’s much more filling, and the texture is better. Perhaps I will be purchasing some more in the future. Oh, when I bought the yogurt I also grabbed some Tofu. Last night I cut and cubed some and put it in a bbq marinade for some BBQ Tofu Pizza for later today. This will be another first for me, and I’m very nervous/excited. Ok, well I’m off to run some errands. I hope everyone has a nice Sunday!
