My own personal Wendy’s

Yesterday afternoon when I checked the mail I was very excited to see my new bathing suit from Victoria’s Secret had arrived!  Yes, I know it is February, no, I’m not going on a vacation anytime soon, but it was on sale.  Note to self, trying on bathing suits, in February, with no tan, when you’re already depressed about not being able to work out is not a good idea.  My initial thoughts were to send it back and exchange it for the medium because I thought I looked like a fatty, but when I showed my mom she rolled her eyes and told me I was insane and that it was cute.  So, I think I’m going to keep it.

I had chicken that I needed to use last night for dinner, so all day yesterday I was trying to think of something delicious to make, and I remembered the Spicy Chicken Sandwich in the Hungry Girl Cookbook. I got out my Fiber One cereal, poured 1/3 cup into a plastic bag, and began to smash them into bread crumbs.  I poured them out onto a plate and mixed in salt, pepper, cayenne pepper, and chili powder.  I took my one chicken breast  (threw the three others into plastic bags and in the freezer) cut it in half, dipped both halves into the egg whites and then coated them with the spice/bread crumb mix, and then placed them on a baking sheet sprayed with non-stick spray.  I also lightly sprayed the top of the chicken, and then into the oven at 375 degrees for 10 minutes.  After the 10 minutes, flip them over and put them back in for another 10-12 minutes. My delicious and crispy spicy chicken sandwich. With a side of mac and cheese.  I really could have gone for some veggies or something, but we had absolutely none in the house.  I ate the sandwich on a Pepperidge Farm Deli Float, best little rolls.  It was so good, I’ll definitely be making this again.  My mom ending up eating the other half of the chicken.

I am walking a little easier today, but not without pain completely.  I think I may try and do my yoga DVD tonight, but skip the squat and lunges section and just focus on arms and abs.  I have never wanted to go workout so bad in my life!
