Pizza, wine, and LOST!

Guess what it did again last night… snowed! At least I’m getting my moneys worth out of the all wheel drive car I purchased in August.

Still so pretty, even if it is annoying

Since I cannot workout, or barely even walk, I stopped at Target on my way home from work to avoid going home, sulking on the couch, and drowning my sorrows in wine. Target is always a dangerous stop for my bank account, I always seem to come out with things I had no intention of buying when going in. Due to my shopping extravaganza over the weekend, I knew I had to watch myself and somehow managed to escape with only what I went in for.

I needed wrapping paper and a card for the boyfriends v-day gifts, I also picked up one more little present for him :). California Pizza Kitchen was kind enough to give me three coupons for their frozen pizzas, so I decided to also pick those up. Oh man it was so hard to avoid all the junk food in Target, because of course by then it was getting close to dinner time and I was starving! I also picked up some cute little heart stickers for .99. While standing in line waiting to check out, I caved and threw a bag of skittles onto the belt. I figured I would need a snack to go with the three hours of LOST on later.

I really wanted to throw one of the new CPK pizzas into the oven, but I knew without anyone to share it with I would end up eating more than the 1/3 pizza serving size. I decided to make my own healthier pizza instead.

I started by sautèing some onion and red pepper in a pan sprayed with non-stick spray. While they were cooking, I turned the oven on to pre-heat at 375 degrees. After the onion and pepper had cooked for about three minutes I took the pan off the heat, and just let them rest. I placed my crust (a tortilla) on a baking sheet and stuck it in the oven for five minutes, flipping it over half way through. Then I spread some pizza sauce onto the tortilla and topped it with the pepper and onion mixture. Then I added a few slices of fresh mozzarella.Finally, topped with a few pieces of turkey pepperoni, and back into the oven for 5-7 minutes. I cut up the pepperoni slices into fours so that it really covered every bite of the pizza. A sprinkling of Parmesan on top, and it was ready to eat.Oh, and I can’t forget the delicious glass(es) of Malbec that accompanied me through dinner and three hours of LOST.

Originally I thought I would write more about LOST, last night was the season six premiere, but all I really have to say is ummm what? I think I am more confused now than I was at the end of season five. I have a feeling a majority of today will be spent reading online forums of other people discussing their ideas. And I’ll probably watch the episode at least three more times.  [update] for anyone who follows LOST, here is a good blog to follow for theories.

I still can’t walk, it still hurts, which I suppose means I still can’t work out. sigh.
